Roasted Mustard Potatoes

Adapted from, In the Kitchen with Rosie 

Ingredients:

4 tbl Dijon Mustard 

2 tsp paprika 

1 tsp cumin 

1 tsp chili powder 

¼ tsp cayenne pepper 

16 baby red potatoes, washed, and cut in half (peels can stay on)

Chef Note: You can use larger yukon/white potatoes, cut into 1” chunks 


Directions:

Preheat oven 400°F

• Line sheet pan with parchment paper or silpat baking mat.
(this way you will have an easy clean up)!

• In a large bowl, mix mustard and all spices. Whisk to blend thoroughly.

• Add cut potatoes to mustard spice mixture and toss to coat evenly.

• Pour the coated potatoes onto the sheet pan, leave some spacing
and make into one even layer. 

• Bake 45 minutes to 1 hour until the potatoes are fork tender.
