Savory waffles with microgreens, tofu scramble with sweet potato toast, mung bean omelet with seasonal vegetables, the possibilities are infinite.

Soups and Salads

As a member of an heirloom bean club, I often build my soups and salads around beans. Whether it’s adding greens from the farmers’ market to black caviar lentils, or building pozole with hominy, I find soups and salads to be a frequent creative outlet for me. They are incredible palettes for showcasing nature’s beauty – after all, we eat with our eyes first.

Entrées

An entrée is not just a protein and a side. Eating a Whole Food Plant-Based diet will provide you with all the protein and nutrients you need. Whether it’s spaghetti with meatballs, pizza, or burgers and fries, you can still eat your favorite foods but healthfully. Entrées also give you a chance to try global cuisine, letting you explore new flavor combinations and travel the world without leaving your kitchen.

Having spent several years as a professional baker, I still find the process somewhat magical. Whether it’s waiting for a loaf to rise, or finding the perfect balance of spices in a flatbread, there’s always an element of surprise. Adding a dip can highlight your bread for a delicious snack to transform in into a stunning appetizer.

Desserts

I often plan a meal starting with the dessert! Having been a pastry chef for years, I enjoy the challenge of adapting my old recipes for a Whole Food Plant-Based, SOS Free diet. Each time I perfect a recipe I feel like I’ve unlocked a secret that I can’t help but share. To transform a decadent mousse or a favorite cookie recipe into something healthy is a gift I am happy to give.

Holidays

When we think about holidays, we immediately think about food. Whether it’s lox and latkes, or cornbread stuffing and pumpkin pie, many of our cherished holiday memories revolve around food. There is real joy in discovering you can have gefilte fish, or matzo balls, or even Christmas cookies. Preparing holiday foods always feels like observing the holiday while carrying on family traditions.
