Pea Hummus

Makes approximately 2 cups 

Ingredients:

2 cups of frozen peas (if peas are in season use fresh shelled peas) 

¼ cup tahini 

2 large garlic cloves 

½ cup fresh mint, packed 

¼ cup lemon juice plus zest of the full lemon 

2 tbl cold water 


Directions:

• Bring a small pot of water to a boil, add peas and cook for 3-4 minutes. The peas will become 
bright green, be careful not to overcook. Drain peas in colander. You can throw an ice cube on
top of the peas to stop the cooking process or run peas under cold water. Shake well, so no water
remains. 

• In a food processor, add all ingredients: peas, tahini, garlic, fresh mint, lemon juice, zest and cold
water. Pulse mixture several times, until you have desired consistency. (I prefer some texture).

• Taste and adjust. You may need a hint more lemon juice or add more lemon zest. Either the juice
or zest will bring up the flavor. 

• Spread on sweet or white potato toast or use as a dip for crudités. (cut raw carrots, celery, peppers) 

• Cover and refrigerate for few days. 

Chef Notes:

If you wanted to add protein, add ½ cup of cooked chickpeas.

If you don’t have food processor, mash peas with fork, mince garlic, chopped mint and
zest finely and mix all ingredients.
