Baked Potato Latkes

Makes approximately 5-6

Ingredients:

1 Idaho potato, peeled and grated 

2 tbl grated white or red onion

1 tbl ground flax seed plus 3 tbl water (makes one flax “egg” equivalent to one egg)

1 tbl flour (all-purpose, spelt or oat)


Directions:

Preheat oven 400°F

• Line the baking sheet with parchment paper or Silpat baking mat
(This way, you won’t need any oil.)

• Combine all ingredients in a large bowl and mix well.

• Split batter into individual latke portions. You should get 5-6 latkes.

• Bake for 20 minutes. Once the bottoms are brown, flip and cook until done for
approximately another 20 minutes.

• Serve hot with unsweetened applesauce.
