Date Paste

Ingredients:

8 oz of pitted dates (medjool, deglet noor)

½ cup of hot water

 Directions:

• In a small bowl, place pitted dates and cover with hot water. Let dates soak 10-20 minutes.

• Place the dates and half the reserved water into a food processor and blend until smooth.
Add more water if you'd like a thinner consistency. Transfer to a container and cover.

• Store date paste in refrigerator for up to 1 month, or freeze into cubes to store 6 months.

• Be sure to save any of the soaking liquid, as this liquid can also as this liquid can be used as a
sweetner.

Chef Note: If you are using deglet noor, which are much harder and drier, increase your soaking time.
