Red Cabbage with Mango Salad
Ingredients:
2 cups red cabbage, thinly sliced
1 mango, peeled and dice
½ cup red pepper, diced
1 T red onion, finely minced
1 tsp jalapeño, finely minced (remove seeds)
Dressing:
½ tsp tahini
1 T tamari (low-sodium)
1 lime, juiced
Garnish:
Chopped cilantro and unsalted peanuts
Directions:
• Thinly slice red cabbage.
• Bring a pot of water to a boil. Blanch the cabbage for 10 - 15 seconds.
• Fill a bowl with ice water and immediately plunge the cooked cabbage into the water to stop the
cooking process
• Once cool, drain the cabbage in a colander. You might have to press the cabbage with your hand
to get rid of excess water.
• In a bowl, add cabbage mango, red peppers, onion, and jalapeño.
• Mix tahini, tamari, and lime juice in a small bowl. Then pour on top of the vegetables and lightly toss.
• Garnish with chopped cilantro and peanuts.
